Wouldn’t a race of beings who only ate other sentient beings who only ate other sentient beings in turn be less evil, since they would be eating only beings who ate other sentient beings, and thus “deserved” to be eaten themselves?

No it means you have to capture and enslave 3 species of sentient beings just to feed them that’s 3x as evil as just one species.
